Herb Crusted Salmon with Mustardy Potatoes, Tzatziki + Crispy Capers

For the salmon:

  • 4 salmon fillets

  • Zest of 1 lemon

  • 2 tbsp chopped dill

  • 2 tbsp chopped parsley

  • 1-2 garlic cloves, grated

  • 1 tbsp Dijon mustard

  • 1 tbsp EV olive oil

  • Salt + pepper

For the potatoes:

  • 750g baby potatoes

  • 2 tbsp olive oil

  • 1 tbsp wholegrain mustard

  • Drizzle of honey

  • 1 tbsp chopped chives
