This recipe was SO good and something i’ll be recreating over and over again this summer, especially in this tofu loving house.
Rachel made the best tofu skewers marinated in her own Ama’s sauce (which you can buy from Delli Market) and served with grilled pineapple and the miso jerk sauce. If you’re planning on a bbq this summer, this recipe would also work a treat.

Ingredients:
Cornflour
Agave Syrup
Tofu (we used The Tofoo Co. Naked Tofu)
One Pineapple
Skewers
Coriander
To serve:
Coconut Yogurt
Lime
Red onion
Salad
Method:
Start by preparing tofu into chunks and toss in cornflour in a large bowl.
Fry in olive oil until slightly crispy on the outside.
Meanwhile, cut pineapple into thick slices and griddle on a pan.
Add two teaspoons of jerk marinade to tofu in the pan and keep stirring until golden and all the flavour is locked in.
Prepare tofu onto skewers, brushing the Sticky Miso Jerk and dress with coriander.
Serve with sliced red onions with coconut yogurt, squeeze of lime and salad.
